Roasted beets chevre mousse, candied walnuts, arugula

SECOND COURSE (choose from the following)

Pork degustation – pork fritter, pork loin, bacon, cherry gastric, sage polenta
Wild Sea Bass – butter poached fillet, roasted cauliflower, curried seafood bisque, confit shallots
Dry aged prime flat iron steak – espresso salt rub, smoked potato espuma, gingerblackberry vinaigrette (+$5)
Hill Farms roasted tomato risotto – zucchini spaghetti, olive oil-eggplant tartar

THIRD COURSE (choose from the following)

Strawberry gazpacho – peach sorbet, poached meringue
Pineapple carpaccio – piña colada sorbet
