Salmon and Scallop Osso Bucco – Fresh wild Alaskan salmon wrapped scallop with a roasted tomato burre blanc, and local market pairings.

Lobster and Corn Ravioli – Local roasted corn Ravioli with Lobster in a sauce Americaine.

Iowa Premium Farms Angus Beef Tenderloin – 6 oz. filet mignon family farm raised in Tama with garlic mashed potatoes and char-grilled asparagus.
